SUMMARY:Chocolate Cake Day
DESCRIPTION:Do we need a birthday\, wedding or anniversary to have chocolate cake? Not on January 27\, because it’s National Chocolate Cake Day and we will feature a sch-mattering of chocolate varieties. In America\, chocolate was consumed primarily as a beverage until the 1830s or 40s. Chocolate cakes\, as we think of them today\, mostly did not exist then. According to the Dover Post\, the chocolate cake was born in 1765 when a doctor and a chocolate maker teamed up in an old mill. They ground up cocoa beans between huge millstones to make a thick syrup. The liquid was poured into molds shaped like cakes\, which were meant to be transformed into a beverage. \nA popular Philadelphia cookbook author\, Eliza Leslie\, published the earliest chocolate cake recipe in 1847 in The Lady’s Receipt Book. Unlike chocolate cakes we know today\, this recipe used chopped chocolate. Other cooks of the time such as Sarah Tyson Rorer and Maria Parloa all made contributions to the development of the chocolate cake and were prolific authors of cookbooks. The first boxed cake mix was created by a company called O. Duff and Sons in the late 1920s. Betty Crocker released their first dry cake mixes in 1947.

DESCRIPTION:Turmeric is pronounced turr-mer-ick and is a rhizome — an underground stem that resembles a plant’s root. It’s a member of the ginger family. Be sure to try some of entrees that we’ll include tumeric as one of the ingredients as part of our LOVE FOOD series. Turmeric is native to Asia. A large percentage of the world’s supply of turmeric is grown in India. Erode\, in the South Indian state of Tamil Nadu\, is known as the “Yellow City” or “Turmeric City.”\nTurmeric is not only used as a spice\, but is also used as a natural dye. For example\, the striking yellow tones of Buddhist robes are from turmeric. Turmeric (especially fresh) will stain your clothes\, hands\, counters\, and cutting boards\, so it’s best to put on an apron while cooking with it at home. \nWhile turmeric is prevalent in Indian cuisine\, it is also widely utilized in Malaysian (laksa)\, Moroccan (ras el hanout)\, and Middle Eastern (hawaij)\ncuisines. Turmeric is culturally important in other ways. Haldi (the Hindi word for turmeric) is utilized in the Hindu wedding ritual — the Haldi Ceremony\n— to ward off evil and encourage prosperity.

Be sure to try Erick’s chilaquilles\, refried beans and mexican-style scrambled eggs when they will be served in the Dining Center during brunch. \nFrom the first time Erick’s mother took him to a farmer’s market in his hometown of Mexico City\, he wanted to become a chef. Working in the kitchen alongside her\, Erick loved how all of those fresh produce items\, varieties of meats\, and flavorful spices come together to make a meal. Realizing he could make more of an impact introducing people to food than being a chef\, he came to America to get a degree in Restaurant Management which brought him to New England. After graduating from school where he worked in his college’s dining program as a student\, Erick held several positions in the hospitality industry in and around Boston. Through those experiences he marveled at how food from different parts of the world can give guests the opportunity to learn about new cultures without having to travel. One of his favorite food takes him home…it’s called ‘mole verde.’ The dish combines more than 30 ingredients of herbs and seasons brought together into a puree that tastes amazing when it’s served over chicken and rice. It’s definitely his ‘go-to’ request when Erick visits with his folks.

DESCRIPTION:We’re kicking off a fun food series where we’ll feature favorite dishes of our team members. The first will be entrees from Turkey that are favorites of Dining Center Manager\, George Altug. George’s dinner menu includes meatball casserole\, Bulgar pilaf\, stewed leeks and rice and Turkish-style mixed vegetables. In addition\, he will be featuring Turkish-style lentil meatballs\, a mezzo bar and stuffed eggplant.  \nGeorge’s culinary inspiration comes from his father who operated a restaurant in Istanbul Turkey where he was born and raised. Growing up\, George lived in his father’s kitchens that created a desire for a lifetime of being around food. He came to America in 2000 to study digital media arts\, animation\, and modeling in Boca Raton Florida. But\, he wanted to return to food service and his passion for food continued to grow so he opened his own restaurant that featured his native Turkish cuisine fused with flavors from the Mediterranean regions of Italy\, Greece and the Middle East. His favorite dish? It’s definitely ‘guvec’ which is a slow cooked casserole made with lamb\, steamed vegetables and a specially prepared rice.

DESCRIPTION:One of our Farm to Fork partners\, High Lawn Farm located in Lee\, MA will be on hand to serve eggnog and provide samples of their hard ice cream. \nHigh Lawn Farm has been in continuous operation since before 1900. The proprietorship was assumed by Colonel H. G. Wilde and Mrs. Marjorie Field Wilde in 1935 from Mrs. Wilde’s family\, and today it continues under the ownership and guidance of the next generation. It is the last remaining\, complete dairy farm in the Berkshires – producing\, bottling and delivering its own milk – representing over 100 years in the same family. Our High Lawn Farm cows feed off fresh grass in the summer months\, and almost all of their winter feed comes straight from our corn and hay fields. We don’t use genetically modified seeds and avoid harmful pesticides. There are never any animal by-products in our feed. This assures that our milk is an all-natural\, artificial hormone-free product. And our cows are milked only twice a day\, whereas other farms may milk their cows as many as four times a day. Because we take such a good care of our herd\, our cows have a life expectancy that is twice that of many other dairy farms. As we like to put it\, we have Jersey Cows\, not milk machines. And perhaps we are prejudiced\, but we believe the Jersey cow has the most beautiful\, doe-like face of the entire bovine kingdom.

DESCRIPTION:As the kickoff to Bon Appetit’s series to help the Emerson community have a better understanding of ‘where food comes from\,’ Horse Listeners Orchards’ Matt Couzens will visit campus and share his experiences as a local farm producer. After a corporate career spanning 32 years\, Matt wanted to try something different. He had no farming background\, but he had an intense desire to do it. “I didn’t think it would be easy\,” he says\, “and I wanted to do it right.” Doing it right includes being kind to the land and nature. On the 153-acre Horse Listeners Orchard in Ashford\, Connecticut\, Matt and his staff watch every crop to determine what it needs. The majority of the fresh produce we serve in the Dining Center is grown and harvested on Matt’s farm. Be sure to come by and speak with Matt to learn more about ‘where food comes from.’

DESCRIPTION:In another of our LOVE FOOD series\, we will feature foods from Southeast Asia. The primary flavors of Filipino cuisine are sour\,\nsalty\, and sweet. Some examples include: the use of peanuts in kare kare and the use of coconut milk in ginataan dishes which bear resemblance to Thai\, Indonesian\, and Indian foods. Filipino eating etiquette prescribes using a spoon and fork (knives are not used regularly)\, or eating with your hands (using the proper technique).. Eating is social experience in the Philippines mealtimes are replete with a welcoming vibe and lively conversation. It’s not unusual for Filipinos to eat five times a day in the Philippines. Three meals and two snacks (at least). Merienda (in Tagalog) = snack between meals. The Philippines are top producers of coconuts and pineapples\, and also contribute to the world’s supply of rice and sugar.
