DESCRIPTION:As the kickoff to Bon Appetit’s series to help the Emerson community have a better understanding of ‘where food comes from\,’ Horse Listeners Orchards’ Matt Couzens will visit campus and share his experiences as a local farm producer. After a corporate career spanning 32 years\, Matt wanted to try something different. He had no farming background\, but he had an intense desire to do it. “I didn’t think it would be easy\,” he says\, “and I wanted to do it right.” Doing it right includes being kind to the land and nature. On the 153-acre Horse Listeners Orchard in Ashford\, Connecticut\, Matt and his staff watch every crop to determine what it needs. The majority of the fresh produce we serve in the Dining Center is grown and harvested on Matt’s farm. Be sure to come by and speak with Matt to learn more about ‘where food comes from.’

DESCRIPTION:In another of our LOVE FOOD series\, we will feature foods from Southeast Asia. The primary flavors of Filipino cuisine are sour\,\nsalty\, and sweet. Some examples include: the use of peanuts in kare kare and the use of coconut milk in ginataan dishes which bear resemblance to Thai\, Indonesian\, and Indian foods. Filipino eating etiquette prescribes using a spoon and fork (knives are not used regularly)\, or eating with your hands (using the proper technique).. Eating is social experience in the Philippines mealtimes are replete with a welcoming vibe and lively conversation. It’s not unusual for Filipinos to eat five times a day in the Philippines. Three meals and two snacks (at least). Merienda (in Tagalog) = snack between meals. The Philippines are top producers of coconuts and pineapples\, and also contribute to the world’s supply of rice and sugar.

DESCRIPTION:Growing up in a household with a father who was a chef in an Asian fusion restaurant\, Tinney was introduced to a wide range of some great tasting and interesting food. From an early age\, she learned the importance to try anything and everything at least once. From her first taste of sushi\, Tinney was hooked and appreciates how sushi can be taken to a true art form with its many variations. That love of food led her to pursue a college degree in hospitality management. What she’s noticed most about Emerson students is their willingness to voice their opinion. Personally\, we welcome the input because when you gain a greater understanding of guests’ interests and needs we can focus on creating an exceptional guest experience that exceeds expectations.

DESCRIPTION:Cooking is both an art and a science. The technical parts of cooking involve chemistry\, mathematics and physics. The art of cooking involves pleasing the eye and the palate. We first “taste” the food we we eat by observing how it looks. On October 24th our Chefs will feature one particular technique known as braising. \nBy its very nature a braise is easygoing. Brown some meat or aromatic vegetables in fat\, add a small amount of liquid (don’t immerse everything)\, then let it simmer into a state of deep flavor and succulent tenderness. It’ll hang out until you’re ready to eat\, and even taste better in a day or two.

DESCRIPTION:George’s culinary inspiration comes from his father who operated a restaurant in Istanbul Turkey where he was born and raised. Growing up\, George lived in his father’s kitchens that has triggered a lifetime of being around food. He came to America in 2000 to study digital media arts\, animation and modeling in Boca Raton Florida. But\, he wanted to return to food service and his passion for food continued to grow so he opened his own restaurant that featured his native Turkish cuisine fused with flavors from the Mediterranean regions of Italy\, Greece and the Middle East. George’s favorite dish? It’s definitely ‘guvec’ which is a slow cooked casserole made with lamb\, steamed vegetables and a specially prepared rice. George brings his love of food to campus where he likes to emphasize how our food is presented with the belief that if food looks good and smells great\, it will taste even better.

You will be helping to create a better world because vegetarian diet have proven health benefits\, save animals’ lives and help to preserve the Earth. According the North American Vegetarian Society the benefits of a vegetarian diet include: \n– Reduce the risk of major killers such as heart disease\, stroke and cancer while cutting exposure to foodborne pathogens\n– Provide a viable answer to feeding the world’s hungry through more efficient use of grains and other crops\n– Save animals from suffering in factory-farm conditions and from the pain and terror of slaughter\n– Conserve vital but limited freshwater\, fertile topsoil and other precious resources\n– Preserve irreplaceable ecosystems such as rainforests and other wildlife habitats\n– Decrease greenhouse gases that are accelerating global warming\n– Mitigate the ever-expanding environmental pollution of animal agriculture

DESCRIPTION:Come by the DC to pick up your free eco-ware clamshell. We know that students are busy and often must eat on the run. This need makes to-go dining very popular but has the potential to generate a massive amount of waste. Much of this waste can be avoided with Eco-Ware reusable containers that eliminates waste altogether.\nHow does Eco-Ware work in the DC and other Emerson cafés?\n• Let the cashier know that you would like to take food to go and present them with your purple key tag or returned empty container.\n• The cashier will give you a clean Eco-Ware container and a to-go hot or cold beverage cup when they swipe you into the Dining Center or greet you in the Max or Paramount cafés.\n• Now fill the container with whatever you would like\, from any station or your café item from the Max or P-Cafe and be on your way. Keep in mind that the container must close\, but you can still choose to take a piece of hand fruit as well. NOTE: Good for dine-out meals only and not to be used in conjunction to dine-in meals.\n• No need to stop back at the cashier stand\, just exit and enjoy your meal.\n• When you’re finished\, empty the container and return it to the cashier. They will take your dirty container and give you another purple tag.\n• Now the cycle repeats and you will reduce your environmental footprint by using your container again and again!\nThis program is available every day of the week for breakfast\, lunch\, and dinner.\nPlease note that you must leave with your meal.\nThat’s all there is to it to enjoy a great tasting meal on the run and do your part to be good to the environment and help us reach our 2030 goal of reduce waste by 50 percent.

SUMMARY:Pick Up Your Eco-Ware Clamshell
DESCRIPTION:Come by the DC to pick up your free eco-ware clamshell. We know that students are busy and often must eat on the run. This need makes to-go dining very popular but has the potential to generate a massive amount of waste. Much of this waste can be avoided with Eco-Ware reusable containers that eliminates waste altogether.\nHow does Eco-Ware work in the DC and other Emerson cafés?\n• Let the cashier know that you would like to take food to go and present them with your purple key tag or returned empty container.\n• The cashier will give you a clean Eco-Ware container and a to-go hot or cold beverage cup when they swipe you into the Dining Center or greet you in the Max or Paramount cafés.\n• Now fill the container with whatever you would like\, from any station or your café item from the Max or P-Cafe and be on your way. Keep in mind that the container must close\, but you can still choose to take a piece of hand fruit as well. NOTE: Good for dine-out meals only and not to be used in conjunction to dine-in meals.\n• No need to stop back at the cashier stand\, just exit and enjoy your meal.\n• When you’re finished\, empty the container and return it to the cashier. They will take your dirty container and give you another purple tag.\n• Now the cycle repeats and you will reduce your environmental footprint by using your container again and again!\nThis program is available every day of the week for breakfast\, lunch\, and dinner.\nPlease note that you must leave with your meal.\nThat’s all there is to it to enjoy a great tasting meal on the run and do your part to be good to the environment and help us reach our 2030 goal of reduce waste by 50 percent.
